As a Certified Nutrition Specialist, I like to find ways to prepare delicious foods that most people might not believe are actually healthy for you. If you have a sweet tooth like me, I’m sure you’ve tried to find ways to still enjoy sweets, but also try to make them healthier than typical junk food desserts.

The main problem with most so-called “healthy” desserts is that most companies try to make them healthier by reducing the fat content and therefore increasing the sugar content or artificial sweeteners…none of them! there is nothing healthy about it!

Below is my famous healthy Chocolate Peanut Butter Fudge recipe that takes only 5 minutes and is really simple. The good thing is that I use no added sugars, no artificial sweeteners, and all sources of healthy fats. You’ll see why below.

My Healthy Peanut Butter Fudge Recipe (peanut butter can be omitted if you prefer plain chocolate):

  • Extra Dark Chocolate Bar (3-4 oz bar works well, look for at least 70% cocoa content, 70-85%, this minimizes sugar content)
  • 4 or 5 tablespoons of your favorite organic nut butter (almond butter, cashew butter, peanut butter all work well)
  • 2/3 to 3/4 cup organic coconut milk (great source of healthy saturated fat from medium chain triglycerides – MCTs)
  • 2 tablespoons of rice bran (additional source of healthy fiber)
  • 2 tablespoons oat bran (healthiest fiber, including soluble fiber)
  • 1/2 cup raw pecans, almonds, or walnuts (yes, plus healthy fats, antioxidants, and tons of vitamins and minerals)
  • 1/2 cup dried cranberries or raisins (optional depending on your taste)
  • 1 teaspoon vanilla extract
  • a bit of stevia to sweeten slightly (stevia is a non-caloric natural sweetener as opposed to harmful artificial sweeteners)

Start with the coconut milk, nut butter, and chocolate bar in a medium saucepan over low heat. Stir continuously as the chocolate, coconut milk, and nut butter melt. Once these are melted, add all the other ingredients and mix very well.

Once everything is well mixed, spread the mixture on wax paper placed in a baking dish and throw it in the refrigerator to solidify.

You now have one of the healthiest chocolate candies ever known to man!

Note that you still need to keep your portions small because this is still a high calorie snack even though it is super healthy. The good news is that it has less sugar and calories than typical fudge and has a lot more nutrition than any typical fudge.
