Recipe for Pad Phet Muh Sei Noh Mai
This is one of my favorite dishes: Pad Phet Muh Sei Noh Mai or Thai Pork with Bamboo. You don’t have to use pork, I used chicken.
It is a dish that I like to make, firstly, because it is very spicy and, secondly, because by omitting the sugar and rice, I can make it low carb. It is also very easy to do.
The following recipe is good for 4 servings if served with rice, each serving is around 250 calories.
You will need the following ingredients:
400 g pork chop (from the top or from the eye) – You can also use chicken breast or beef fillet instead of pork.
3 tablespoons of fish sauce
½ teaspoons freshly ground black pepper
1 can of whole bamboo shoots (540g)
½ red bell pepper and ½ green
5 tablespoons of oil
2 tablespoons yellow curry paste
2 tablespoons of sugar
Cut the pork into bite-sized strips, mixing in a tablespoon of fish sauce and pepper. Let it marinate for about 10 minutes.
In a colander, rinse the bamboo shoots in cold water and cut them into thin strips. Wash the peppers and cut them into strips.
Heat the oil in a frying pan or wok, adding the yellow curry paste. After about 2 minutes, add the meat. Increase the heat and add the bamboo shoots, the pepper strips, 2 tablespoons of the fish sauce, the sugar and a little water. Continue cooking for about 2 minutes over high heat while stirring constantly.
Serve with rice.
